Ingredients

  • 1/4 Peanut Squash (approx. 150-200g)
  • 1 cup Sweet Rice Flour (approx. 120g)
  • 1 Egg
  • Olive Oil (for frying)
  • Crown Daisy (or Water Parsley) for garnish
  • Pinch of Salt

First, wash the peanut squash thoroughly. Use a vegetable peeler to remove the thin skin. Trim off both ends of the squash and then use a knife or spoon to carefully scoop out and discard the seeds from the inside.

Once the skin and seeds are removed, finely julienne the peanut squash. If the pieces are too thick, they will take longer to cook and may result in a less desirable texture. In a mixing bowl, combine the julienned squash with 1 cup of sweet rice flour, 1 fresh egg, and a pinch of salt. Mix everything well to form a batter. Adjust the consistency as needed; the batter should not be too runny or too stiff. You might need to adjust the amount of sweet rice flour depending on the moisture content of the squash.

Heat a frying pan over medium-low heat and add a generous amount of olive oil. Spoon portions of the batter onto the hot pan, forming them into flat, round shapes. As the batter begins to set slightly, artfully arrange the prepared crown daisy (or water parsley) on top of each pancake. The aromatic crown daisy adds a wonderful fragrance to the jeon. Once one side is golden brown and cooked, carefully flip the pancakes to cook the other side until golden and crispy.

Ensure each pancake is about 1cm thick by using a ladle-sized portion of batter and gently pressing it down with the back of the spoon to flatten it. This technique ensures the pancakes cook through evenly and develop a delightful crispiness. Cook until both sides are golden brown and crispy. These delicious peanut squash pancakes are now ready! For an enhanced flavor experience, serve them with a side of soy sauce dipping sauce.
