Recipe Info

  • Category : Dessert
  • Ingredient Category : Flour / Wheat
  • Occasion : Everyday
  • Cooking : Pan-fry
  • Servings : 1 serving
  • Difficulty : Anyone

Ingredients

  • 1 ripe banana
  • 1 cup of fruit (berries for topping)
  • 1 large egg
  • 200g pancake mix
  • 110ml milk
  • 10g vanilla extract or vanilla powder (optional, for enhanced flavor)
  • 10g butter (for batter and pan)
  • Allulose or honey (syrup of choice)

Cooking Instructions

Step 1

In a mixing bowl, combine 200g of pancake mix and 10g of vanilla powder (if using). Add 1 large egg and 100ml of milk. Whisk gently with a fork or spatula until just combined and mostly smooth. Be careful not to overmix, as this can make the hotcakes tough. The batter consistency should be slightly thinner than typical pancake batter.

Step 1

Step 2

Melt 10g of butter in a small saucepan over low heat or in a microwave-safe bowl for short intervals. It’s best to use the butter when it’s warm, not piping hot. Instead of adding all the melted butter at once, gradually pour it into the batter while mixing gently. This step helps incorporate a richer, buttery flavor into the batter.

Step 2

Step 3

Peel and slice 1 ripe banana into approximately 1cm thick rounds. Dip each banana slice into the prepared pancake batter, ensuring it’s evenly coated. Coating the banana slices helps keep them moist and tender when cooked, and also prevents them from burning too quickly.

Step 3

Step 4

Lightly grease a non-stick skillet or griddle with a little remaining butter or oil over medium-low heat. Once the pan is warm, carefully place the batter-coated banana slices onto the skillet, leaving some space between them. Cook for about 2-3 minutes until the underside is golden brown. Gently flip each banana hotcake with a spatula and cook the other side until golden brown.

Step 4

Step 5

Arrange the beautifully cooked banana hotcakes on a serving plate. Drizzle generously with warm allulose or honey, according to your preference. Add fresh or frozen berries as a topping for a burst of refreshing flavor and vibrant color. Enjoy the delightful harmony of soft hotcakes, sweet bananas, and zesty berries – a truly satisfying treat!
