I bought two mini pumpkins. I steamed one in the microwave to enjoy as is, and used the other to create this delightful ‘Pumpkin Eggslut’ filled generously with egg and mozzarella cheese. It’s a perfect, quick, and nutritious snack made effortlessly in the microwave.
Ingredients- 1 mini pumpkin (approx. 233g)
- 1 fresh egg
- 1-2 pinches of fine salt
- A few grinds of black pepper
- Generous amount of mozzarella cheese (to taste)
- A sprinkle of fresh parsley (for garnish)
Washing the Mini Pumpkin- A little baking soda (for scrubbing)

Cooking Instructions
Step 1
First, select one beautiful and clean mini pumpkin. A weight of about 233g is ideal.
Step 2
Sprinkle some baking soda onto the pumpkin’s skin. Then, using a soft scrubber, thoroughly scrub every part of the pumpkin’s surface. This helps to effectively remove any dirt or residues from the skin.
Step 3
Rinse the scrubbed pumpkin under cool running water multiple times to wash away any remaining baking soda and ensure it’s perfectly clean.
Step 4
Carefully slice off the top of the pumpkin, like a lid. Then, using a paring knife, make a circular cut around the inside edge of the pumpkin’s top. This creates an opening that will make scooping out the insides easier.
Step 5
Using a teaspoon, gently scoop out the seeds and stringy bits from the inside of the pumpkin, ensuring the cavity is clean and spacious enough to hold the egg.
Step 6
Crack one fresh egg directly into the hollowed-out pumpkin. Then, using the tip of a chopstick, gently pierce the egg yolk and white 2-3 times. (Tip: Poking holes in the egg prevents it from exploding in the microwave, so be sure to do this!)
Step 7
Sprinkle 1-2 pinches of fine salt over the egg to season it. Be careful not to add too much.
Step 8
Add a few grinds of black pepper to taste. Freshly ground pepper will add a lovely aroma.

Now for the best part! Generously pile mozzarella cheese over the egg, filling the space completely. The melted cheese will create a wonderfully gooey texture.

Place the prepared mini pumpkin eggslut onto a microwave-safe dish. Microwave on high for approximately 3 minutes and 30 seconds to 4 minutes.

Cooking times may vary slightly depending on the size of your pumpkin and the wattage of your microwave. The eggslut is ready when the cheese has melted beautifully and begins to spill slightly over the edges of the pumpkin.
