This homemade vegan condensed milk is perfect for creating creamy mashed potatoes and can be used in many other dishes. Highly recommended for those pursuing a healthy diet or avoiding dairy products!
Key Ingredients
- Almond Breeze Unsweetened 950ml (Unsweetened Almond Beverage)
- Stevia Sweetener 68g (approximately equivalent to 130g of sugar)
Cooking Instructions
Step 1
In a pot, combine the 950ml of unsweetened almond milk and 68g of stevia sweetener. Heat over medium heat, stirring well to dissolve the sweetener without clumps.
Step 2
Once the mixture begins to simmer, reduce the heat to low. Let it gently simmer for about 50 minutes, allowing it to thicken. The key is to cook it until it becomes slightly clumpy and reaches a thicker consistency, similar to condensed milk.
Step 3
Remember to stir occasionally to prevent sticking to the bottom of the pot! After simmering for about 50 minutes, strain the finished condensed milk through a fine-mesh sieve for a smooth texture. Pour into a sterilized jar and store in the refrigerator. (Note: Approximately 405ml of condensed milk yields from about 1018ml of liquid.)
