  • 1kg fresh strawberries
  • 1kg sugar (equal weight to strawberries)
  • 1/2 tsp salt
  • 1 Tbsp vinegar
  • 2 x 500ml glass jars

Prepare 1kg of fresh strawberries. Wash them thoroughly under running water, adding 1 tablespoon of vinegar or baking soda. This effectively removes any residual pesticides or impurities from the strawberries.

Use a paring knife to remove the green stems from the strawberries, then rinse them gently under running water again. After washing, drain the strawberries in a colander and remove as much surface moisture as possible. Leftover moisture can lead to mold, so ensure they are dried well.

While the strawberries are draining, sterilize the two glass jars you’ll use for the syrup with boiling water. Cleanly sterilizing the jars is crucial to prevent mold and ensure your strawberry syrup can be stored for a longer period. First, place the jars upside down in a pot of cold water. Once the water starts boiling, reduce the heat to medium and continue boiling for about 10 minutes. Avoid placing cold jars directly into boiling water, as the sudden temperature change can cause them to crack. Slowly increase the temperature from cold water. After sterilizing, leave the jars standing upright, not on their sides, to allow the steam to completely dry the inside. Two 500ml jars are sufficient for approximately 1kg of strawberries.

Once the jars have drained, use a paper towel to meticulously pat dry the strawberries that have already had their initial moisture removed. Eliminating even the slightest bit of moisture will help prevent mold and keep the strawberries fresh for longer.

Place the dried strawberries in a large bowl and mash them with your hands. If you prefer some texture, mash them coarsely, leaving small chunks. If you prefer a smoother consistency, mash them thoroughly. I chose to mash them for a slightly textured result.

Now, weigh the mashed strawberries. After subtracting the weight of the bowl, I had approximately 900g of mashed strawberries.

For the strawberry syrup, the standard ratio is equal parts strawberries and sugar (1:1). However, if you find that too sweet, you can reduce the sugar by about 10-20%, or 100-200g, based on the strawberry quantity. I added sugar in proportion to the amount of strawberries.

After mixing the sugar and mashed strawberries well, add 1/2 teaspoon of salt. Salt enhances the sweetness of the sugar, further enriching the flavor of the strawberry syrup.

If you plan to store the strawberry syrup for a longer time, it’s beneficial to gently heat the mixture in a pot. Those who plan to consume it quickly can skip this step. The key is not to boil it vigorously but to turn off the heat as soon as bubbles begin to form around the edges. Turn off the heat just as it starts to simmer.

Now, simply fill the sterilized jars with the prepared strawberry syrup to your desired level. Your delicious homemade strawberry syrup is complete!

Using your strawberry syrup is easy. To make strawberry milk, add about 2 tablespoons of syrup to a cup and pour in milk, then stir well. For a refreshing strawberry ade, add a desired amount of strawberry syrup to a glass and top with sparkling water. You can also add ice cubes according to your preference.
