Ingredients
- 1/2 mini pumpkin (approx. 300-400g)
- 1/2 cup mixed nuts of your choice (almonds, walnuts, cashews, etc.)
- 2 Tbsp agave syrup (or honey, maple syrup can be substituted)
Cooking Instructions
Step 1
Wash the mini pumpkin thoroughly. Place it in a steamer basket and steam for about 15-20 minutes until very tender. It’s important that the pumpkin is soft enough to be easily pierced with a fork.

Once steamed, let the pumpkin cool slightly. Peel it, then cut it into bite-sized cubes (about 2-3 cm). Be careful not to mash the pumpkin while cutting. Transfer the cubed pumpkin to a large bowl.

For the mixed nuts (almonds, walnuts, cashews, etc.), you can lightly toast them in a dry pan or use them as is. Crushing the nuts slightly will enhance their texture and help them blend better with the pumpkin. Add the crushed nuts to the bowl with the pumpkin.

Drizzle the 2 tablespoons of agave syrup evenly over the pumpkin and nuts. You can substitute agave syrup with honey or maple syrup. Adjust the sweetness to your preference.

Put on clean disposable gloves and gently toss the ingredients together, being careful not to mash the pumpkin. The key is to lightly mix everything so that the syrup evenly coats all the pieces.

Line a baking sheet with parchment paper. Spread the coated pumpkin and nuts in a single layer, ensuring they don’t overlap. Bake in a preheated oven at 150°C (300°F) for about 10 minutes. Bake until the edges are lightly golden and the syrup has slightly caramelized. Adjust the time and temperature according to your oven’s specifications.
