Main Ingredients

  • 1 Carrot
  • A little Olive Oil

Cooking Instructions

Step 1

First, wash and peel 1 fresh carrot. Slice it into rounds approximately 2cm thick. Ensuring uniform thickness will help the carrots cook evenly and make the process smoother.

Heat a pan with a generous amount of olive oil over medium heat. Add the sliced carrots and sauté until they become lightly golden brown. Sautéing them until the surface is slightly cooked will help bring out their natural sweetness.

Once the carrots are partially cooked, season them lightly with 0.5 tsp of salt. A pinch of freshly ground black pepper can also be added for extra flavor.

Step 4

Pour 500ml of water over the seasoned carrots. (Using chicken or beef broth instead of water will add a richer depth of flavor.)

Add the remaining salt (0.5 tsp) and 0.8 Tbsp of sugar. Bring the mixture to a boil over high heat. Cooking rapidly over high heat will help the flavors meld beautifully into the carrots.

Step 6

Continue to cook until the liquid has reduced and is almost completely evaporated, leaving a glaze on the carrots. This step is crucial for infusing the carrots with flavor and ensuring they are tender inside. Stir occasionally to ensure the glaze coats the carrots evenly.

Step 7

When the liquid has almost completely evaporated and the carrots are glossy, turn off the heat. Be careful not to overcook, as the carrots can become too mushy. Turn off the heat as soon as you reach your desired consistency. Serve warm alongside your steak for a delightful meal!
