Today, we’re making a delightful dish using bell peppers and potatoes. While bell peppers resemble green peppers, they are sweeter and offer a wonderfully crisp texture. This air fryer potato bake is perfect as a nutritious snack for children and also fits well into a low-calorie diet meal. Enjoy this simple yet impressive homemade treat!

  • 100g Sliced Ham
  • 50g Mozzarella Cheese
  • 20g Shredded Cheese (optional)

Thoroughly wash the potatoes with a scrub brush, using baking soda or coarse salt if desired, to ensure they are clean.

In a pot, add enough water to fully cover the potatoes. To shorten cooking time and enhance flavor, add a pinch of salt and sugar. Bring the water to a boil over high heat.

Once the water is boiling, add the potatoes and cover the pot with a lid. The cooking time will vary depending on the size of the potatoes. Boil small potatoes for about 20 minutes and large potatoes for about 25 minutes. (For this recipe, small potatoes were boiled for 20 minutes).

Test if the potatoes are cooked by piercing them with a fork; they should be tender. Carefully peel the hot potatoes using the fork to hold them.

Cut the bell peppers in half lengthwise. Remove the seeds and the core from each half to create a clean cavity for filling.

Finely dice the sliced ham.

Once the potatoes are cooked and slightly cooled, place them in a large bowl. Use a fork to mash them until smooth, ensuring there are no large lumps. Mix in the oligodang, salt, and black pepper to season the mashed potatoes.

Add the diced ham to the seasoned mashed potatoes and mix well. Now, it’s time to add mozzarella cheese for an extra creamy texture and deliciousness. Combine the ham and cheese thoroughly with the mashed potato mixture.

Generously stuff the prepared bell pepper halves with the mashed potato mixture. Press down firmly with a spoon to ensure the filling is packed tightly and won’t spill out during baking, maintaining a neat shape. Top the mashed potato filling inside the bell peppers with mozzarella cheese.

Finally, sprinkle the shredded cheese evenly over the top. If you don’t have shredded cheese, you can omit this step, but it adds a lovely golden-brown finish.

Place the stuffed bell pepper and potato bakes into an air fryer oven preheated to 180°C (350°F) and bake for about 10 minutes. They are ready when the cheese is melted and golden brown, and the bell peppers are slightly tender. (Adjust cooking time and temperature based on your air fryer’s specifications.)
