Sweet potatoes are delicious steamed or roasted, but sometimes, making them into a sweet “matang” is pure joy. The crispy fried sweet potatoes coated in a sweet syrup will make your taste buds sing. It’s easier than you think, making it a perfect snack for kids or a delightful dessert for adults!

Ingredients

  • 2 medium sweet potatoes
  • Cooking oil (for frying)
  • 5 Tbsp sugar
  • 1 Tbsp corn syrup (or rice syrup)
  • 2 Tbsp water
  • A pinch of black sesame seeds (for garnish)

Wash the sweet potatoes thoroughly. Cut them into bite-sized pieces, about 2-3 cm thick. Avoid cutting them too small, as they might break apart during frying. Ensure even sizing for consistent cooking.

In a pot, heat a generous amount of cooking oil to about 170°C (340°F). If you don’t have a thermometer, you can test the oil by inserting a wooden chopstick; small bubbles rising around it indicate the right temperature. Carefully add the cut sweet potatoes and fry until they are golden brown and crispy on all sides. Make sure they are cooked through to the center.

Once fried, remove the sweet potatoes from the oil using a sieve or slotted spoon and let them drain on a wire rack. This step is crucial to remove excess oil, ensuring the “matang” isn’t greasy and maintains its delightful crispiness.

Now, let’s make the sweet syrup. In a clean pan over medium heat, add the 5 tablespoons of sugar. Let it melt slowly without stirring. Resist the urge to stir; just let the sugar melt and caramelize to a golden amber color. Once it starts bubbling, add 1 tablespoon of corn syrup and 2 tablespoons of water. Let it boil for a short while until the syrup thickens slightly. (Be careful: the syrup can burn quickly, so monitor the heat closely.)

Turn off the heat or reduce it to very low. Add the fried sweet potatoes to the pan with the syrup. Quickly toss and coat the sweet potato pieces evenly with the syrup using chopsticks or a spatula. Transfer the coated sweet potatoes to a serving plate and sprinkle with black sesame seeds for a beautiful garnish. Your delicious Sweet Potato Matang is ready to enjoy!
