Introducing a delightful sweet potato snack perfect for enjoying with warm tea during the chilly winter months. ‘Goguma Pass’ features a crisp exterior and a moist, sweet syrup coating, making it a beloved treat for all ages. Create this wonderful snack at home with simple ingredients!
Main Ingredients- 300g Korean sweet potatoes (approx. 2 medium)

Step 1
The first step to making delicious Goguma Pass! Peel the Korean sweet potatoes thoroughly and cut them into bite-sized pieces (about 2-3 cm). It’s important to keep them a moderate size, as cutting them too small might cause them to break apart.
Step 2
Rinse the cut sweet potatoes under cold water several times to remove excess starch. This helps prevent them from sticking together when frying or simmering, leading to a cleaner texture. Soaking them in clean cold water for about 20 minutes will sufficiently remove the starch.

After removing the starch and completely drying the sweet potatoes, microwave them for about 2-3 minutes until partially cooked. This will help them maintain their shape and prevent crumbling when stir-fried later. If you don’t have a microwave, you can steam them.
Step 4
Heat 3 tablespoons of cooking oil in a wide pan over medium-low heat. Add the partially cooked sweet potatoes and stir-fry them until they are lightly golden brown on the surface. Stirring them gently will ensure even cooking and a more delicious texture. Be careful not to burn them.
Step 5
Remove the stir-fried sweet potatoes to a separate bowl. Wipe the pan clean, then add 3 tablespoons of sugar and 3 tablespoons of water over low heat. Stir continuously as the sugar dissolves to prevent burning.

Once the sugar has completely dissolved and the syrup begins to bubble gently, add 1.5 tablespoons of corn syrup. Corn syrup will make the syrup more glossy and sticky, helping it coat the sweet potatoes beautifully. Keep the heat on low.

When the delicious syrup is ready, return the stir-fried sweet potatoes to the pan. Stir and toss them in the syrup over low heat until the syrup coats the sweet potatoes evenly. Flip them gently to ensure the syrup adheres well. Continue simmering until the syrup thickens and clings to the sweet potatoes.
Step 8
Once the sweet potatoes are coated with a glossy syrup, turn off the heat. Transfer them to a serving dish. Sprinkle 0.5 tablespoons of black sesame seeds evenly over the top for added nutty flavor and an attractive appearance. Enjoy them while they are still warm for the best taste!
