Sweet & Creamy Sweet Potato Stew
A Rich and Flavorful Seasonal Sweet Potato Cream Stew Recipe

Main Ingredients- 300g boneless, skinless chicken thighs
- 1 medium sweet potato
- 1 bell pepper
- 1/4 onion
Cooking Instructions
Step 1
1. Prepare the vegetables: Peel the sweet potato and cut it into approximately 2cm cubes. Remove the seeds and pith from the bell pepper, then cut it into large square pieces, similar in size to the sweet potato. Dice the onion into roughly 2cm pieces, matching the size of the bell pepper.

2. Marinate the chicken: Cut the chicken thighs into bite-sized pieces. In a bowl, combine the chicken pieces with 2 Tbsp cooking wine, 1 tsp minced garlic, a pinch of salt, and a pinch of ground black pepper. Mix well and let it marinate for about 10 minutes.

3. Sauté the chicken and vegetables: Heat a deep pan or pot over medium heat and add 1 Tbsp of cooking oil. Add the marinated chicken and stir-fry over high heat for about 2 minutes until the surface is lightly browned. Then, add the cubed sweet potato and diced onion, and continue to sauté over medium heat for another 3 minutes to bring out the sweetness of the vegetables.

4. Simmer the stew: Pour in 500ml of heavy cream and 100ml of water. Add 1/2 tsp of salt. Bring the mixture to a boil over high heat, then reduce the heat to medium-low. Cover loosely (or leave uncovered) and simmer gently for about 10 minutes, or until the sweet potatoes are tender. Stir occasionally to prevent sticking.

5. Season and finish: Add the chopped bell pepper and cook for another minute, stirring gently. You want the bell pepper to be slightly tender but still retain some crispness. Finally, season with salt and black pepper to your taste. Your warm and creamy sweet potato stew is ready! It’s delicious served with bread or rice.
