  • 1/2 medium pumpkin (kabocha squash)
  • 1 Tbsp mayonnaise
  • 1 Tbsp whole grain mustard
  • 2 Tbsp raisins

Because kabocha squash has a tough skin, it’s helpful to wash it thoroughly and then microwave it for 2-3 minutes before cutting. This softens the skin slightly, making it much easier to slice without straining your wrist.

Carefully scrape off any rough or bruised spots from the squash skin with a knife. If the remaining skin looks good, you can leave it on. The skin contains a lot of nutrients, so it’s a shame to waste it!

Slice the pumpkin into uniform pieces, about 0.5 to 1 cm thick. Place the slices in a small steamer basket and steam for about 8 minutes once the water is boiling. The steaming time can vary depending on the size and thickness of your pumpkin, as well as the heat. To check for doneness, insert a chopstick – it should go through easily. (In the photo, half was cut slightly larger for storage, while the other half was cut smaller for immediate use.)

Be careful not to overcook the pumpkin, as it can become mushy and lose its appealing texture. It should be tender but not overly soft. Aim for a point where a chopstick inserts smoothly with just a slight resistance.

When well-cooked, the skin of the kabocha squash becomes tender enough to eat comfortably. By including the skin, you ensure you’re getting the full nutritional benefits of the squash.

Transfer the steamed pumpkin to a bowl. Add the mayonnaise and whole grain mustard. These two ingredients will beautifully complement the pumpkin’s natural sweetness and add a lovely depth of flavor.
