Homemade Pumpkin Pie
Have leftover pumpkin and don’t know what to do with it? Make this sweet and nutritious pumpkin pie! This recipe is perfect for a 2-tier pie mold. It’s easy for anyone to follow.
Pumpkin Filling Ingredients
- 1 Egg
- 50g Heavy Cream
- 30g Cream Cheese (softened at room temperature)
- 20g Honey
- 30g Almond Flour
- 1 Mini Pumpkin (about the size of two fists combined)
- 1 Tbsp Corn Starch
- 1 drop Vanilla Extract (optional, for enhanced flavor)
Cooking Instructions
Step 1
First, steam the mini pumpkin for about 20 minutes until tender. Once steamed, let it cool slightly so the peel is easier to remove. Then, peel the pumpkin.
Step 2
Cut the peeled pumpkin in half, scoop out the seeds and pulp, and place it in a blender. Blend until it forms a smooth puree, ensuring there are no lumps.
Step 3
In a bowl, cream the softened cream cheese until smooth. Add the egg and mix well. Stir in the honey and corn starch until you have a smooth mixture without lumps. For an extra touch of aroma, add a drop of vanilla extract. Finally, add the pumpkin puree and almond flour, mixing everything thoroughly until well combined. (You can also mix the honey with the pumpkin puree if you prefer.)
Step 4
Pour the prepared pumpkin filling into your pre-made 2-tier pie mold (or your preferred mold). Smooth the surface evenly for a neat finish.
Step 5
Preheat your oven to 180°C (350°F). Place the filled pie mold in the preheated oven and bake for about 10-15 minutes for the first stage. This helps the filling set slightly.
Step 6
Arrange thinly sliced pumpkin pieces decoratively on top of the partially baked pie. Once you’re happy with the design, return the pie to the oven and bake for another 10 minutes at 180°C (350°F). Continue baking until the pumpkin slices are tender and the top of the pie is golden brown.
Step 7
Carefully remove the baked pie from the oven. While still warm, brush a thin layer of honey or sugar syrup (glaze) over the top for a delicious, glossy finish. Applying it while warm helps it absorb and look even more appealing. ^^
