They reheat beautifully in the microwave, retaining the corn’s delightful texture and flavor without significant changes.   • 100g Spam, mashed and finely chopped
  • 1 tbsp cooking oil
  • 3 eggs
  • 1/2 tsp herb salt
  • 2 bowls of cooked rice
  • 1 tbsp toasted sesame seeds

Prepare the sweet corn first. Take one ear of steamed sweet corn. Insert a paring knife between the kernels and twist to separate them cleanly. You should have about one ear’s worth of kernels.

Prepare the vegetables and Spam. Finely chop 1/4 onion. Finely chop the 2 green chilies after removing the seeds for a touch of spice. Mash the 100g of Spam with the back of a knife until finely chopped; this prevents clumping when stir-frying and ensures even distribution.

This is the first step to building flavor in your fried rice! Heat 1 tbsp of cooking oil in a pan over medium heat. Add the chopped onion and mashed Spam, and stir-fry them first. The Spam will render some fat, adding a wonderful savory aroma.

Once the onion becomes translucent and releases its sweet fragrance, add the prepared sweet corn kernels and chopped green chilies. Stir-fry everything together. The corn kernels will turn slightly translucent, and their sweet, nutty aroma will intensify.

Now it’s time to add the eggs for a creamy texture. Crack 3 eggs into a bowl. Ensure you remove the chalazae (the white, stringy bits) for a smoother consistency. Whisk the eggs with 1/2 tsp of herb salt until slightly frothy. The herb salt will enhance the eggs’ flavor.

Push the ingredients in the pan to one side to create space. Pour the whisked egg mixture into the empty space. As the egg begins to set, gently stir it with chopsticks or a spatula, like making scrambled eggs. This will add a soft texture to the fried rice.

Now, it’s time to add the rice and stir-fry everything together. Add 2 bowls of freshly cooked, warm rice to the pan. If using cold rice, microwave it briefly to warm it up before adding to ensure it doesn’t clump.

Using the back of a spatula or ladle, gently press down on the rice while stirring. Ensure all the ingredients – corn, Spam, and egg – are evenly distributed throughout the rice grains. It’s important to stir-fry thoroughly so the ingredients don’t clump together.
