This recipe shows you how to make ‘Hotteok Tteokbokki,’ a dish where you can enjoy tteokguk rice cakes as if they were sweet hotteok (Korean sweet pancakes). Based on the original recipe, we’ve slightly reduced the sweetness to suit our family’s palate and added cinnamon powder for extra flavor.   • 300g Tteokguk rice cakes (Soak in cold water for at least 30 minutes)
  • 3 Tbsp nuts (Choose your favorites, finely chopped for use)

Sweet Cinnamon Braising Sauce
  • 200ml Water
  • 2 Tbsp Sugar (Adjust sweetness to your preference)
  • 2 Tbsp Sesame seeds
  • 2 Tbsp Sesame oil
  • 3 Pinches Salt (Balances sweetness and adds umami)
  • 1 Tbsp Cinnamon powder (The key ingredient for that hotteok flavor!)

Cooking Instructions

Step 1

First, soak the tteokguk rice cakes in cold water for at least 30 minutes until they become soft. This step prevents the rice cakes from becoming hard or mushy during cooking.

Step 2

Finely chop the nuts using a knife or food processor. These will add a delightful crunch and nutty flavor.

Step 3

Heat a pan over medium-high heat. Place the drained, softened tteokguk rice cakes in the pan. Add all the braising sauce ingredients except the cinnamon powder (water, sugar, sesame seeds, sesame oil, salt). Bring to a boil. This step allows the sauce to penetrate the rice cakes.

Step 4

Once the sauce starts boiling, reduce the heat to medium. Stir occasionally with a spatula or spoon to prevent the rice cakes from sticking to the bottom of the pan. Cook until the rice cakes are tender and the sauce has thickened slightly.

Step 5

As the rice cakes cook and the sauce begins to reduce, add 1 tablespoon of cinnamon powder. Stir well to combine. The subtle cinnamon aroma will spread, adding that characteristic scent of hotteok.

Step 6

Turn off the heat when the rice cakes are fully cooked and the sauce has reached your desired consistency. Be careful not to overcook, as this can make the rice cakes tough. Adjust the cooking time based on the sauce’s thickness.

Step 7

Transfer the finished Hotteok Tteokbokki to a serving dish. Generously sprinkle the prepared chopped nuts over the top. The savory nuts will enhance the overall flavor of the sweet tteokbokki. Enjoy your delicious creation!
