  • A pinch of sesame seeds or black sesame seeds (for garnish)
  • Cooking oil (for frying and sautéing)

Syrup Sauce
  • 4 Tbsp rice syrup or corn syrup
  • 2 Tbsp water

Cooking Instructions

Step 1

First, peel the sweet potatoes thoroughly. After peeling, soak them in cold water for about 10 minutes to remove excess starch. This step helps prevent the sweet potato pieces from sticking together and results in a cleaner fry.

Step 2

Drain the sweet potatoes from the water and pat them completely dry with kitchen paper towels or a clean cloth. Leftover moisture can cause oil splattering, so ensuring they are dry is crucial for safety and texture.

Step 3

In a frying pan or pot, combine the syrup sauce ingredients: 4 tablespoons of rice syrup and 2 tablespoons of water. Stir well. Heat over low heat, and once it starts to bubble around the edges, add the prepared sweet potatoes. Gently toss them to coat evenly in the syrup.

Step 4

Maintain medium-low heat and gently stir or toss the sweet potatoes, frying them until they turn a beautiful golden brown color. It’s important to cook them slowly so the surface becomes slightly firm and develops a lovely hue. Keep an eye on the heat to prevent burning.

Step 5

When the syrup sauce has reduced slightly, coating the sweet potato surface and becoming glossy, turn off the heat. If the syrup reduces too much, the candies can become hard. Turning off the heat while the syrup still looks slightly moist is the secret to preventing them from hardening when cold.
