The Perfect Kid’s Snack: Delicious Sweet Potato Rolls with Tortillas and Cheese
My child suddenly wanted to try this after seeing it on a short video, so I made it! It tastes like the delicious crust of a sweet potato pizza, and my child devoured it in no time. It’s a simple yet satisfying and nutritious snack.
Ingredients- 1 large baked sweet potato
- 2 tortillas
- 2 string cheeses
- Cooking oil (for brushing)
Cooking Instructions
Step 1
First, prepare the sweet potato. Wash it thoroughly, then either steam it until very soft or bake it in an oven or air fryer until slightly browned. The key is to cook it until it’s tender and mashable.
Step 2
Once the sweet potato is cooked and tender, peel it while still warm. Mash it smoothly using a fork or a potato masher. Spread the mashed sweet potato evenly over half of each tortilla, leaving a small border. Aim for a spreadable consistency; if it’s too watery, it might be difficult to spread.
Step 3
Place one string cheese stick on top of the mashed sweet potato spread on each tortilla. Position the cheese slightly inward from the edge of the tortilla to prevent it from oozing out when rolled.
Step 4
Carefully roll up the tortilla tightly, enclosing the sweet potato and cheese. Be gentle to avoid tearing the tortilla. A snug roll will keep the filling contained. Once rolled, lightly brush the outside of the rolls with cooking oil. This will help them achieve a golden-brown and crispy finish when cooked.
Step 5
Place the prepared sweet potato and cheese rolls in an air fryer basket. Cook at 180°C (350°F) for about 10 minutes, or until the tortillas are golden brown and crispy, and the cheese is melted. Keep an eye on them to prevent burning.
Step 6
Once cooked, let the rolls cool slightly before slicing. Be cautious when cutting as the crispy tortillas can crumble. Slice them into bite-sized pieces for easy eating. You can also cut them in half to enjoy a larger bite. This snack is truly delicious and highly recommended!
