Cooking Instructions

Step 1

Today, we’re going to make a deliciously sweet and tender stir-fried radish, especially perfect when radishes are in season. It’s a fantastic side dish for rice and also a great ingredient for bibimbap!

Step 2

First, wash the radish thoroughly and cut it into thick strips, about 0.5 cm thick, using a knife rather than a mandoline slicer. Cutting it thickly like this helps maintain a pleasant texture after cooking. Heat 1 tablespoon of perilla oil in a frying pan over medium heat. Add the thick-cut radish strips and stir-fry until they start to become translucent and release their moisture.

Step 3

Once the radish begins to soften slightly, pour in about 100ml of broth. (Using anchovy-kelp broth or rice water will add a deeper flavor.) Continue to stir-fry gently over medium-low heat until the broth reduces. Then, cover the pan with a lid and let it steam for about 5 minutes to cook the radish through. Uncover, season with 1 tsp Korean soup soy sauce and 1/2 tsp salt (adjust to your preference). Add the julienned carrots and 1 tsp minced garlic, and stir-fry briefly.

Step 4

Finally, add the chopped green onions and toss them in the residual heat after turning off the stove. The subtle aroma of the green onions will infuse the radish, making it even more delicious.

Step 5

To finish, sprinkle 1 tsp of toasted sesame seeds over the top. Your delicious, in-season stir-fried radish is ready! Enjoy it with a warm bowl of rice.
