  • 1/2 tsp salt
  • 1 tsp soy sauce (or fish sauce)
  • 1 tsp toasted sesame seeds
  • 1 tsp minced garlic
  • 1 Tbsp perilla oil (deulgireum)

First, thinly julienne the radish using a knife, rather than a mandoline slicer. Cutting it thickly like this will ensure a tender yet satisfying texture after cooking. Heat 1 tablespoon of perilla oil in a frying pan over medium-low heat. Add the thickly sliced radish and stir-fry until it becomes slightly translucent and tender, about 5-7 minutes. This process softens the radish and brings out its natural sweetness.

Step 3

Once the radish begins to soften, add 100ml of vegetable broth or water. Continue to stir-fry gently as the liquid reduces, allowing the radish to absorb the savory flavors. Then, cover the pan and let it steam over low heat for about 5-7 minutes, or until the radish is very tender. Remove the lid, stir in 1 teaspoon of soy sauce (or fish sauce), 1 teaspoon of minced garlic, and the julienned carrots and chopped scallions. Stir-fry briefly until the vegetables are just wilted. This step should only take about 1-2 minutes.
