It’s peach season! Making canned peaches ahead of time is a great way to enjoy them for longer. They’re perfect as a snack or a base for drinks.

  • Sugar 1.5kg
  • Lemon juice 5 Tbsp

Wash the fresh peaches thoroughly under running water to remove any fuzz. Pat them completely dry. Trim away any bruised or damaged parts. It’s best to use peaches that are firm rather than overly soft.

Sterilize the glass jars you’ll use for the peach syrup. Wash them well, then place them in boiling water to sterilize. Ensure the jars are oriented opening-side up for thorough sterilization and hygienic storage.

Now, let’s make the peach syrup. In a large pot, combine water and sugar in a 2:1 ratio. Add 5 tablespoons of lemon juice. Heat over medium-low heat, stirring occasionally, until the sugar is completely dissolved. (If you have a large quantity, dividing it into two pots makes the process more manageable.)

Cut the well-washed peaches into bite-sized pieces. Remove the pits, and cut only the flesh. You can choose to leave the skin on if you prefer, which adds a wonderful texture to the finished product.

Once the sugar syrup has cooled slightly (adding peaches to boiling syrup can make them too soft), gently add the prepared peach pieces. Stir them gently for about 2-3 minutes. Turn off the heat immediately. It’s important to maintain the shape of the peaches.

After turning off the heat, let the mixture cool down completely. While it’s cooling, stir occasionally to prevent the peaches from clumping or cooking unevenly.

Once completely cooled, carefully pack the peaches and syrup into the sterilized glass jars. Seal the jars tightly and refrigerate for at least 3 days to let them mature. After this resting period, you’ll have delicious and fragrant peach syrup ready to enjoy. Letting it mature for a few more days will deepen the flavor even further!
