Sweet and Tangy Tomato Marinade

Create a delightfully sweet, tangy, and refreshing marinade using fresh tomatoes or cherry tomatoes. It pairs wonderfully with meat dishes and is also delicious served as a salad. This recipe offers a perfect balance of health and flavor.

Main Ingredients

  • 370g Cherry Tomatoes
  • 3 Tbsp Minced Onion
  • 2 Tbsp Vinegar (for washing)

Marinade Sauce

  • 3 Tbsp Honey
  • 0.5 Tbsp Dried Basil (or Italian herb mix)
  • 0.5 tsp Salt
  • 4 Tbsp Extra Virgin Olive Oil
  • 5 Tbsp Balsamic Vinegar

Cooking Instructions

We’ve prepared fresh cherry tomatoes to make a flavorful tomato marinade.

First, carefully remove the stems from the cherry tomatoes. Then, fill a bowl with enough water to submerge the tomatoes, add 2 tablespoons of vinegar, and gently swirl the bowl to wash them. After washing with the vinegar solution, rinse thoroughly under running water about 3 times to ensure no residue remains.

Make shallow cross-shaped incisions on the top of each cleaned cherry tomato. The depth of the cut should be about 0.2 cm, not too deep. Using a bread knife can make this process easier and safer, preventing the tomatoes from being crushed.

Bring a pot of water to a rolling boil over high heat. Once boiling, carefully add the scored tomatoes and blanch for about 1 minute. This will cause the scored parts to naturally open up, loosening the skin. Immediately remove the tomatoes from the boiling water and plunge them into an ice bath for 2 minutes to cool down.

After cooling in the ice bath, the skins will peel off very easily. Gently twist and peel away the skin, leaving only the smooth tomato flesh.

In a wide bowl, combine 0.5 tsp salt, 0.5 Tbsp dried basil, 3 Tbsp honey, 4 Tbsp flavorful extra virgin olive oil, and 5 Tbsp tangy balsamic vinegar. Whisk well using a whisk or fork until all ingredients are thoroughly combined. If you don’t have dried basil, parsley flakes can be a good substitute. Stir until the sauce is emulsified.

Add the peeled tomatoes and finely minced onion to the prepared marinade sauce. Gently toss to coat without crushing the tomatoes. Mix lightly until all ingredients are evenly coated with the sauce; your delicious tomato marinade is ready.

Transfer the finished tomato marinade into sterilized glass jars. Fill the jars appropriately without overfilling.

Seal the jars and refrigerate. The marinade can be stored for about a week, maintaining its freshness. Don’t discard the leftover sauce; it makes an excellent salad dressing!
