I made this delicious Pineapple Fried Rice at home today! I personally adore cooked pineapple and find it hard to understand those who don’t – it’s just so delicious! Conversely, I’m sure there are many who can’t comprehend loving cooked pineapple. Well, let me share with you how to make this fantastic Pineapple Fried Rice right now.
Main Ingredients- 1 bowl of freshly cooked rice
- 150g fresh pineapple
- 80g peeled and deveined shrimp
- 1/4 onion
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1/2 stalk green onion, finely chopped
- 2 fresh eggs
Cooking Instructions
Step 1
First, finely chop the green onion into pieces about 0.3 cm thick. This will help release a subtle, fragrant aroma when sautéed.
Step 2
Core and finely dice the onion, green bell pepper, and red bell pepper into approximately 0.3 cm cubes. Cutting them into uniform, bite-sized pieces ensures they cook evenly.
Step 3
Cut the fresh pineapple into bite-sized cubes, about 0.3 cm in size. This ensures the pineapple integrates well with the rice and other ingredients.
Step 4
Crack the 2 eggs into a bowl. Using a fork or whisk, gently beat the eggs until well combined and smooth. Beating them thoroughly prevents clumps in the fried rice.
Step 5
Now, let’s start cooking! Heat a pan over medium-low heat and add 3 tablespoons of cooking oil. Add the chopped green onions and sauté until fragrant, about 1-2 minutes. This step creates a flavorful ‘green onion oil’.
Step 6
Once the green onions release a pleasant aroma, add the peeled shrimp. Stir-fry until the shrimp turns pink and is cooked through.
Step 7
When the shrimp is almost cooked, add the diced onion, green bell pepper, red bell pepper, and pineapple to the pan. Stir-fry over high heat for about 2-3 minutes until the vegetables are tender-crisp and the pineapple is slightly softened. Keep the vegetables slightly crunchy for a better texture.
Step 8
As the vegetables begin to cook, gently pour the beaten eggs around the edges of the pan. As the eggs set, gently stir and scramble them into the mixture, breaking them up into small pieces. This incorporates the egg throughout the fried rice.
Step 9
Once the eggs are cooked to your liking, add the bowl of warm rice and 1 tablespoon of oyster sauce. Stir and toss everything together, ensuring the rice is evenly coated with the sauce and ingredients. You can adjust the oyster sauce to your taste.
Step 10
Continue to stir-fry until all the ingredients are well combined and the rice is heated through. Drizzle in 1 tablespoon of sesame oil and toss gently for a final minute to infuse a nutty aroma. Adding sesame oil at the end preserves its fragrance.
Step 11
Finally, sprinkle 1 tablespoon of toasted sesame seeds over the top. Your delicious and vibrant Pineapple Fried Rice is now ready to be enjoyed! It’s a perfect, flavorful meal.
