Ingredients- Radish: 1 bowlful (approx. 300-400g)
- Coarse salt: 2 tsp
- Sugar: 2 Tbsp
- Vinegar: 4 Tbsp
- Water: 1.5 paper cups (approx. 270ml)
Cooking Instructions
Step 1
Prepare a fresh radish. First, peel the radish thoroughly, then julienne it into very thin, long strips. Cutting it thinly allows the flavors to penetrate better and enhances the crispness. Using a mandoline slicer can be convenient.
Step 2
Take handfuls of the julienned radish and place them in a generous bowl. Sprinkle 1 tsp of coarse salt over the radish and gently massage it for about 10 minutes. This process draws out moisture from the radish, preserving its crisp texture.

After 10 minutes of pickling, drain the excess water from the radish by placing it in a colander. In the same bowl, combine the remaining 1 tsp of salt, 2 Tbsp of sugar, 4 Tbsp of vinegar, and 1.5 paper cups of water to create the dressing. Add the drained radish to this dressing and gently toss again. Let it marinate for about 20-30 minutes to allow the flavors to meld. Finally, transfer the finished pickled radish to an airtight container and refrigerate.
