Ingredients

  • 1 Apple (medium-sized)
  • 250g Ham (sliced or block)
  • 1 Onion (medium-sized)
  • 1/2 Zucchini (medium-sized)
  • 1/2 Carrot (medium-sized)
  • 1 Potato (medium-sized)
  • 100g Curry Powder (choose your preferred spice level)
  • 700ml Water (approx. 3.5 cups)
  • 3 Tbsp Cooking Oil

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Wash and peel the onion, zucchini, and carrot. Dice them into approximately 1.5cm cubes, suitable for curry. This size ensures a pleasant texture.

Next, prepare the potato and ham. Dice the potato into roughly the same 1.5cm size as the other vegetables. If you’re using sliced ham, you can add it as is. If using a block of ham, cut it into similar-sized cubes. For a delicious variation, consider using sweet potato instead of potato, or substitute the ham with your favorite meat like pork or chicken for a richer flavor!

Wash the apple, peel it, remove the core, and cut it into manageable pieces. Puree the apple using a blender or grate it finely. This will add a smooth texture and natural sweetness to your curry.

Now, let’s start sautéing. Heat 3 tablespoons of cooking oil in a pot or deep pan over medium heat. Once the oil is warm, add the diced ham, onion, zucchini, carrot, and potato. Sauté for a few minutes until the vegetables begin to soften slightly. Do not add the apple yet.

Pour in 700ml of water. Bring the mixture to a boil over high heat, then reduce the heat to medium-low. Cover and simmer for about 10-15 minutes, or until the potatoes and carrots are completely tender. Stir occasionally to prevent sticking.

Once the vegetables are tender, add the pureed apple to the pot. The apple will naturally sweeten the curry and add a lovely aromatic quality.

It’s time to thicken the curry. Gradually add the 100g of curry powder, stirring continuously with a spatula or ladle to ensure it dissolves smoothly and doesn’t clump. You can add a little more water or broth if you prefer a thinner consistency.

Stir until the curry reaches your desired thickness and all the ingredients are well combined. Your delicious apple curry is ready! Serve hot over rice. A sprinkle of parsley or a dash of pepper can be a nice finishing touch.
