Prepare fresh mackerel. If you bought pre-cleaned mackerel from the supermarket, rinse it thoroughly under running water. If there are any remaining fins, trim them with kitchen scissors for a neater appearance.

Line a frying pan with parchment paper and lightly grease it with olive oil. This prevents the mackerel from sticking and helps it cook beautifully. Place the prepared mackerel on the parchment paper.
Step 3
Start by grilling the mackerel on its belly side over medium-low heat. When you flip it to grill the back side, the fish might shrink slightly. Be careful not to press down on it immediately, as it could break apart! Flip it back to the belly side once more to help it regain its shape, then flip it back to the dorsal side to cook until golden brown and nicely done on both sides. Ensure the skin is grilled to a crisp.
Step 4
Now, let’s make the delicious Gogalbi sauce. For the soy sauce gogalbi, mix 2 Tbsp soy sauce, 2 Tbsp corn syrup, and 1 Tbsp sesame seeds. If you prefer spicy gochujang gogalbi, mix 1 Tbsp gochujang with 1 Tbsp water. Brush the prepared sauces evenly over both sides of the grilled mackerel. Cook for a little longer, just until the sauce is cooked through, to allow the flavors to meld into the fish, making it even more delicious. Finally, sprinkle a pinch of black pepper for added aroma.
