Pickling Brine

  • 200ml soy sauce (for savory depth)
  • 300ml water
  • 150ml rice vinegar (for bright acidity)
  • 1/2 cup sugar (adjust to your preferred sweetness)

Sterilize a glass jar by boiling it in water and ensure it’s completely dry. This step is crucial for preserving the freshness of your pickled onions.

Peel and wash the onions, then pat them dry. Slice the onions into bite-sized pieces. For this recipe, we’ll cut each onion into quarters and then slice each quarter into thinner wedges, creating about 8 pieces per onion. This shape helps them absorb the brine beautifully. Prepare the Korean green chili peppers by removing the stems and thinly slicing them.

Now, let’s make the flavorful pickling brine. In a saucepan, combine 200ml soy sauce, 300ml water, 150ml rice vinegar, and 1/2 cup sugar. Stir well and bring to a gentle boil over medium heat until the sugar is completely dissolved. Once it boils, remove from heat and let it cool slightly.

Pour the slightly cooled brine over the onions and chili peppers in the jar, ensuring they are fully submerged. Let the jar cool down to room temperature. Once it’s no longer warm, cover tightly with the lid and refrigerate.
