Main Ingredients
  • 2 handfuls dried shrimp (approx. 50-60g)
  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp ketchup

Cooking Instructions

Step 1

First, prepare about two handfuls of dried shrimp, which is roughly half a cup or enough to fill your hand generously. (approx. 50-60g)

Step 2

If children will be eating this, it’s a good idea to remove the pointy tails to make them softer and safer to eat.

Step 3

This is easy to do by simply twisting or gently pulling the tails off with your fingers. While it might be a little tedious, this step ensures no one has to worry about sharp bits while eating.

Step 4

Now, prepare a pan. It’s important to use a dry pan with no oil added. Place the prepared dried shrimp in the pan and stir-fry over medium-low heat until you hear a gentle sizzling sound. Continue stir-frying until the shrimp turn white and develop a nutty aroma, indicating any fishiness has evaporated. (approx. 1-2 minutes)

Step 5

Once stir-fried, place the dried shrimp in a sieve and gently shake it to remove any dust or small fragments. This step helps the sauce adhere better and results in a cleaner dish.

Step 6

Now, let’s make the delicious sauce! Start by measuring out 1 tablespoon of soy sauce.

Step 7

Next, add 1 tablespoon of sugar for a touch of sweetness.

Step 8

Finally, measure and add 1 tablespoon of ketchup for a tangy flavor and rich color.

Step 9

In a small pot or pan, combine all the sauce ingredients (soy sauce, sugar, ketchup). Gently heat over very low heat until the mixture simmers. It’s crucial to prevent the sauce from burning.

Step 10

As the sauce begins to bubble gently and the sugar dissolves, forming a slightly syrupy consistency, add the stir-fried dried shrimp back into the pan. Quickly toss everything together to ensure the dried shrimp are evenly coated with the sauce.

Step 11

It’s very important to maintain a very low heat throughout this process. High heat can cause the sauce to burn easily and make the shrimp tough. Stir quickly while keeping the heat low. (approx. 1-2 minutes)

Step 12

Finally, transfer the finished stir-fried dried shrimp to a nice serving dish. Sprinkle a generous amount of sesame seeds on top for an extra nutty flavor, and your delicious side dish is complete! Isn’t it wonderfully easy? Enjoy this as a perfect accompaniment to rice or as a bento box addition.
