Today, we’re going to make some incredibly tender and flavorful braised pork ribs. This dish is a guaranteed hit for family gatherings or special occasions!

Main Ingredients

  • 12 pork spare ribs
  • 1 bunch green onions (white parts preferred)
  • 1 medium onion
  • 1 medium potato

Parboiling & Rib Seasoning Ingredients

  • 1 liter water (enough to cover ribs)
  • A few sprigs green onion
  • A pinch of whole peppercorns
  • 1 tsp salt
  • 1 swirl of mirin (cooking wine) (approx. 1 Tbsp)
  • 0.5 tsp minced ginger
  • A pinch of black pepper

Cooking Instructions

Step 1

First, we need to remove the blood from the pork ribs. Soak the ribs in cold water for about 10 minutes. There’s no need to soak them for too long. After soaking, rinse the ribs lightly under running water. Set aside.

Now, let’s parboil the ribs. In a pot, add enough water to cover the ribs. Add a few sprigs of green onion, whole peppercorns, 1 tsp salt, a swirl of mirin (about 1 Tbsp), and 0.5 tsp minced ginger. Bring to a boil, then add the pork ribs and simmer for about 10 minutes. Skim off any foam that rises to the surface for a cleaner broth. Once parboiled, remove the ribs and rinse them under cold water. Discard the parboiling liquid, but make sure to strain out any solids like green onion or peppercorns.

Now, let’s start the main braising process. Place the parboiled ribs in a clean pot. Add all the braising sauce ingredients: 4 soju cups soy sauce, 2 soju cups sugar, 1 soju cup corn syrup (or rice syrup), and 200ml of water or rice water. The liquid should just about cover the ribs. Roughly chop the onion and add it to the pot. Slice the green onion diagonally for garnish.

Bring the mixture to a simmer over medium heat and let it cook until the sauce thickens, about 30-40 minutes, or until the ribs are tender. Stir the ribs occasionally to ensure they are evenly coated with the sauce. Once the ribs are almost tender, peel and thinly slice the potato. (You can also add thinly sliced carrots cut into half-moons at this stage). After adding the potato, reduce the heat to low and continue to simmer for another 15-20 minutes, or until the potatoes are cooked through and the sauce has reduced further.

When the sauce has thickened to your liking and the potatoes are tender and soft, your delicious soy-braised pork ribs are ready! Turn off the heat and garnish with the sliced green onions. Sprinkle with sesame seeds if desired for extra flavor and visual appeal.

✨Pro Tip: Make Fried Rice with Leftover Braising Sauce!✨ Don’t throw away that flavorful sauce! You can easily make a delicious fried rice. Heat a little sesame oil in a pan. Finely chop some kimchi (add a pinch of sugar if using aged kimchi) and stir-fry until fragrant. Add cooked rice and the leftover braising sauce from the ribs, and stir-fry everything together. Finally, crumble in some seaweed flakes and sprinkle with toasted sesame seeds for a delightful fried rice that everyone, kids included, will love!
