Ingredients
  • 50 quail eggs (pre-shelled, or raw quail eggs to be boiled and peeled)
  • 1 small onion
  • 3 Korean chili peppers (Cheongyang peppers)
  • 1 Tbsp minced garlic
  • 500ml water

Seasoning
  • 6 Tbsp soy sauce
  • 4 Tbsp sugar
  • 2 Tbsp plum extract
  • 4 Tbsp corn syrup (or rice syrup)
  • 2 dashes black pepper (approx. 1/4 tsp)

Cooking Instructions

Step 1

For convenience, you can use pre-shelled quail eggs. However, if you’re looking to save a little, boiling and peeling raw quail eggs yourself adds to the experience! Raw quail eggs are quite economical, typically costing just over $1 for 20 eggs. Prepare about 50 quail eggs for this recipe.

Step 2

Peel the small onion and rinse it thoroughly. Finely chop the Korean chili peppers. If you like a spicier kick, I recommend keeping the seeds in for extra heat!

Step 3

Pour 500ml of water into a pot. Using enough water ensures the ingredients cook evenly and absorb the flavors of the sauce.

Step 4

Add all the prepared ingredients—quail eggs, chopped onion and chili peppers, minced garlic—along with all the seasoning ingredients: soy sauce, sugar, plum extract, corn syrup, and pepper. Bring the mixture to a rolling boil over high heat. Once boiling, continue to simmer uncovered for about 15 minutes. Stir occasionally to ensure the sauce evenly coats the eggs.

Step 5

After simmering for 15 minutes, turn off the heat and let it cool slightly. Carefully transfer the jorim to an airtight container. Enjoy your delicious homemade quail egg jorim! It’s wonderful served warm or chilled.
