Main Ingredients- 600g fresh peas
- 1 Tbsp coarse salt (for boiling peas)
- 1.5 cups granulated sugar (approx. 200g)
- 1/2 cup purified water (approx. 100ml)
- 40g corn syrup (or rice syrup)
Cooking Instructions
Step 1
Place the 600g of washed peas in a pot. Add enough water to cover the peas completely. Stir in 1 tablespoon of coarse salt and boil over high heat for 10 minutes. Salt helps to brighten the color of the peas and adds flavor.
Step 2
★ Cooking Tip: Boiling the peas with the lid off prevents any fishy or grassy odors, allowing you to enjoy the fresh taste of the peas. Skim off any foam that forms during cooking.
Step 3
Drain the boiled peas thoroughly using a colander. Be careful as they will be hot.
Step 4
Return the drained peas to the pot. Add 1.5 cups of sugar and 1/2 cup of water. Cook over high heat for 1-2 minutes, stirring until the sugar dissolves. Be careful not to burn the sugar.
Step 5
Once the sugar has completely dissolved, reduce the heat to low. Add 40g of corn syrup and simmer until the liquid has reduced and the peas are glossy. Using corn syrup results in a smoother, glossier candied pea compared to plain sugar. (Can be substituted with rice syrup).
Step 6
Candied peas should NEVER be stored at room temperature! For short-term storage, place them in an airtight container and refrigerate. For long-term storage, it’s best to portion them into serving sizes and freeze.
