  • 1.8kg LA Galbi (Korean-style short ribs)
  • 1 large bowl of tteokbokki rice cakes (approx. 200g)
  • 1/2 medium carrot
  • 1/2 medium sweet potato
  • 2 handfuls of green onions (mostly white parts)

Cooking Instructions

Step 1

Soak the LA galbi in cold water for at least 30 minutes to remove excess blood. Thoroughly draining the blood is crucial for a clean taste without any gamey odor.

Step 2

Bring a pot of water to a boil. Add the soaked short ribs and blanch for 1-2 minutes. This step helps remove impurities and tenderizes the meat. Rinse the blanched ribs thoroughly under cold running water.

Step 3

Prepare the vegetables for the stew. Peel the carrot and sweet potato, then cut them into bite-sized pieces, similar in size to the short ribs. Cut the green onions diagonally into large pieces, focusing on the white parts for aromatic flavor.

Step 4

In a large bowl, combine the blanched short ribs and the prepared carrot, sweet potato, and green onions. Pour in the 360g of store-bought short rib sauce. Gently mix everything together with your hands to ensure the sauce evenly coats the meat. (Tip: You can adjust the amount of sauce to your preference, using the ratio of 20g sauce per 100g of meat as a guideline.)

Step 5

Transfer the sauced short ribs and vegetables to a pot or deep pan. Add the generous portion of tteokbokki rice cakes. Cover with a lid, bring to a boil over high heat, then reduce to medium-low heat. Simmer for about 20-30 minutes, or until the meat is tender and the sauce has slightly reduced.
