A Delicious and Nourishing Red Bean Porridge Perfect for Summer
Today, we’re making Danpatjuk, a traditional Korean red bean porridge, perfect for a refreshing summer treat. 🙂
Red Bean Porridge Ingredients
- 2/3 cup red beans (approx. 100g)
- 2 Tbsp honey (approx. 30g)
- 1/2 cup glutinous rice flour (approx. 50g)
- 1 tsp salt (approx. 5g)
- Pinch of ground cinnamon (for garnish)
- 10 ginkgo nuts (for garnish)
- Water (for dough and consistency)
Cooking Instructions
Step 1
First, wash the red beans thoroughly under running water multiple times until clean. Place the washed red beans in a pressure cooker, add 3 cups of water (using a paper cup as a measure, approx. 540ml), and cook using the steam function for 1 hour. This steaming process will make the beans very soft and easy to mash later.
Step 2
Next, let’s make the ‘saealsim’ (small glutinous rice balls) that add a chewy texture to the porridge. In a bowl, place 1/2 cup of glutinous rice flour (approx. 50g). Gradually add 5 tablespoons of water (approx. 25ml) at a time, mixing to form a smooth dough. If the dough is too sticky, add a little more glutinous rice flour; if it’s too stiff, add a tiny bit more water to reach the right consistency. Once the dough is ready, roll it into small, round balls, like tiny rice cakes.
Step 3
Once the pressure cooker has released its steam, carefully open the lid. The red beans should be very soft. Using a spatula or a fork, mash the cooked beans until they are smooth and there are no large lumps. Mashing them well is key for a smooth porridge. Add 2 cups of water (approx. 360ml, using a paper cup) to the mashed beans and mix well. This step helps establish the base consistency of the porridge.
Step 4
Now, transfer the mashed red bean mixture to a pot and bring it to a boil over medium heat. Once the mixture starts boiling, gently add the prepared ‘saealsim’ one by one, stirring carefully to prevent them from sticking together. At this stage, add 1 teaspoon of salt (approx. 5g) to enhance the sweetness of the porridge and add a touch of savory depth.
Step 5
After adding the ‘saealsim’, continue to stir the porridge continuously for about 20 minutes, or until the ‘saealsim’ float to the surface, indicating they are cooked. Finally, stir in 2 tablespoons of honey (approx. 30g) to add sweetness and mix well until everything is thoroughly combined. The honey will make the porridge wonderfully rich and sweet.
Step 6
Your warm and delicious red bean porridge is ready! Serve it in bowls and garnish with 10 cooked ginkgo nuts and a sprinkle of ground cinnamon for an even more appealing presentation. Enjoy this delightful porridge as a refreshing summer dessert or a hearty, nutritious snack!
