Main Ingredients- 600g Konjac jelly block (firm type or shirataki konjac recommended)
- 3 Tbsp Soy Sauce
- 3 Tbsp Mirin (Sweet Rice Wine)
- 3 Tbsp Honey (or corn syrup)
- 2 Tbsp Sesame Oil (or perilla oil)
- 1 Tbsp Vinegar (to remove konjac odor)
Cooking Instructions
Step 1
First, prepare 600g of konjac jelly block. You can choose the type of konjac you prefer. Cut the konjac into bite-sized pieces or strips. Cutting them slightly thicker will enhance the chewy texture.
Step 2
Bring a generous amount of water to a boil in a pot. Once boiling, add 1 tablespoon of vinegar to the water. Vinegar helps to neutralize any potential beany smell from the konjac. Add the cut konjac and blanch for about 10 minutes. This step significantly improves the konjac’s texture.
Step 3
After blanching, drain the konjac in a colander and rinse it under cold running water to cool it down. This ‘cold shower’ makes the konjac firmer and bouncier. Ensure most of the water is removed, then transfer the konjac to a pot or deep frying pan for simmering.
Step 4
Now, let’s prepare the flavorful sauce. Add 3 tablespoons of soy sauce, 3 tablespoons of mirin, 3 tablespoons of honey, and 2 tablespoons of sesame oil (or perilla oil) to the konjac in the pot. You can adjust the sweetness by modifying the amount of honey.
Step 5
Simmer the mixture, stirring occasionally with a spatula, allowing the konjac to absorb the flavors. Start with medium-high heat, and once it begins to boil, reduce to medium-low heat. Let it simmer gently for about 10-15 minutes until the konjac is well-infused with the sauce.
Step 6
The dish is ready when most of the liquid has evaporated and the konjac is glossy with the reduced sauce. Be careful not to overcook, as it can become tough. It’s perfect when it’s still slightly moist. You can enjoy the Honey Konjac Jelly as is, or garnish with a sprinkle of sesame seeds for extra flavor.
