Sweet and Crunchy Kohlrabi Kimchi for Babies

My younger sister was having a lot of trouble deciding on baby food, so I made some kohlrabi kimchi to help her out with one less thing to worry about for my nephew. 😀 It’s sweet, crisp, and perfect for little ones!

Main Ingredients

  • 2 kohlrabi bulbs
  • Salt (for brining)

Sweet and Spicy Seasoning

  • 1 apple
  • 2 Tbsp fish sauce (like Kkanari)
  • 1 Tbsp plum extract (maesilcheong)
  • 2 Tbsp gochugaru (Korean chili flakes, fine grind)

Cooking Instructions

First, peel the kohlrabi bulbs thoroughly using a vegetable peeler. Wash the apple under running water and remove any bruised or damaged spots.

Dice the prepared kohlrabi into small, bite-sized cubes, about 1 to 1.5 cm, perfect for a baby. Sprinkle salt evenly over the diced kohlrabi and let it brine for about 15-20 minutes. This process draws out excess moisture, making the kohlrabi crispier and helping it absorb flavors better.

Wash the apple thoroughly, as you’ll be using it with the peel. Grate the washed apple finely using a grater. Adding grated apple will significantly enhance the kimchi’s sweetness and depth of flavor, making it more appealing to babies.

Now, let’s make the delicious seasoning! In a bowl, combine the grated apple, 2 tablespoons of fish sauce, 1 tablespoon of plum extract, and 2 tablespoons of fine-ground gochugaru. Mix everything well. Using fine-ground gochugaru helps keep the spice level mild, and you can adjust the seasoning quantities to suit your baby’s palate.

Drain the liquid that has accumulated from brining the kohlrabi. Take the brined kohlrabi pieces and add them to the bowl with the prepared seasoning. Gently toss everything together to ensure the seasoning coats the kohlrabi evenly. Be careful not to mix too vigorously, as this can break down the kohlrabi pieces.

Transfer the finished kohlrabi kimchi into an airtight container or a zip-top bag for refrigeration. I packed it into smaller zip-top bags for my sister’s convenience. While it’s delicious to eat right away, letting it chill in the refrigerator for about a day will allow the flavors to meld and deepen even further.
