  • 1 fresh corn cob (or 1 can of corn kernels, drained)
  • 1/2 cup all-purpose flour (or pancake mix)

Step 1

On the TV show ‘Baek Jong-won’s Alley Restaurant’, they made corn fritters even simpler using canned corn. If you don’t have canned corn at home, don’t worry! You can still make these deliciously with fresh corn. So, don’t give up!

Step 2

If using fresh corn, first steam the cob until tender, let it cool slightly, then carefully cut the kernels off the cob using a knife or by hand. If using canned corn, make sure to drain it very well and use only the kernels. Once you have your corn kernels ready, add a tiny pinch of sugar. This helps enhance the natural sweetness of the corn.

Step 3

Next, add another pinch of salt. This is important for balancing the overall flavor. Just a little salt will bring out the best in the corn.

Step 4

Add the corn kernels to a bowl. This step helps them adhere better to the batter later, contributing to that wonderful chewy texture when you bite into the fritter.

Step 5

Now, add the 1/2 cup of flour and 1/2 cup of water to the bowl. Mix everything together until the corn kernels are evenly coated and you have a batter that’s neither too thick nor too thin. It should be pourable enough to spread gently in the pan. If the batter seems too stiff, add a little more water, a tablespoon at a time, until you reach the desired consistency. Your delicious corn fritter batter is ready!

Step 6

Heat a frying pan over medium heat and add a generous amount of cooking oil. Scoop the corn batter using a ladle and spread it into a round, flat shape on the pan. Cook until the edges are golden brown and the fritter puffs up slightly. You’ll hear the corn kernels sizzling and cooking beautifully. Once the bottom side is golden and cooked through, carefully flip the fritter and cook the other side until equally golden and crisp.

Step 7

Once both sides of the fritter are nicely browned, reduce the heat to low. Sprinkle a generous amount of shredded cheese over the top of the corn fritter.
