Seasoning Ingredients
  • 1/2 Tbsp whole grain mustard
  • 1 Tbsp lemon juice
  • 3 Tbsp apple cider vinegar
  • 1/2 Tbsp plum syrup (maesilcheong)
  • 1/2 Tbsp ginger syrup (saenggangcheong)
  • 2 pinches salt

Cooking Instructions

Step 1

First, prepare 500g of autumn radish. Wash it thoroughly, peel it thinly, and then julienne it into thin, long strips using a knife or a mandoline slicer. Using a mandoline will help you achieve uniformly thin slices.

Step 2

Sprinkle 1-2 pinches of coarse salt over the julienned radish and let it sit for about 10-15 minutes to soften slightly and release moisture. This process enhances the radish’s crispiness. After salting, place the radish in a colander to drain any excess water. There’s no need to rinse the radish afterwards.

Step 3

Now, let’s make the delicious dressing! In a bowl, combine 1/2 Tbsp whole grain mustard, 1 Tbsp lemon juice, 3 Tbsp apple cider vinegar, 1/2 Tbsp plum syrup, 1/2 Tbsp ginger syrup, and 2 pinches of salt. Mix well to create a harmonious sweet and tangy flavor. If you prefer a red version, you can add a little chili powder at this stage.

Step 4

Once the dressing is ready, add it to the drained julienned radish. Gently mix and toss with your hands until the radish is evenly coated with the seasoning. Be careful not to break the radish strips. For an extra touch of flavor, you can add about 1-2 Tbsp of finely chopped green onions and mix again lightly.

Step 5

Your crisp and sweet white radish salad is now complete! It’s delicious served immediately, or you can chill it in the refrigerator for a while for an even more refreshing taste. This dish makes an excellent and healthy side for children’s meals.
