For the Porridge (Rice Flour Mixture)- 3 Tbsp rice flour
- 250ml water
- 250ml water
For the Porridge (Rice Flour Mixture)- 3 Tbsp rice flour
- 250ml water
Cooking Instructions
Step 1
Wash the sweet pumpkin thoroughly and pat it dry. Wrap it tightly with plastic wrap and microwave for about 7 minutes until tender. For a medium-sized pumpkin, this cooking time should be sufficient. You can adjust the time based on the size of your pumpkin; a little over or undercooking is acceptable as it will be cooked further.
Step 2
Prepare the rice flour mixture in advance. In a bowl, combine 3 tablespoons of rice flour with 250ml of water. Whisk well until there are no lumps. This step is crucial for a smooth porridge.
Step 3
Once the sweet pumpkin is cooked in the microwave, let it cool slightly. Cut it in half and scoop out the seeds and stringy insides with a spoon. You can peel the pumpkin if you prefer, or leave the skin on for extra nutrients and a vibrant color. The skin is edible once cooked.
Step 4
Dice the peeled (or unpeeled) pumpkin into approximately 2cm cubes. Place the diced pumpkin and 250ml of water into a blender and blend until smooth and creamy. A fine purée will result in a silky smooth porridge.
Step 5
Pour the blended pumpkin mixture into a pot over medium-low heat. Stir constantly with a spatula or spoon to prevent sticking to the bottom. If you desire a thinner porridge, add more water at this stage. For a thicker consistency, proceed without adding extra water.
Step 6
As the pumpkin mixture begins to simmer, gradually add the prepared rice flour mixture while stirring continuously. The porridge will start to thicken as the rice flour cooks. Once it reaches your desired consistency, reduce the heat to low. Season with 0.5 tablespoon of salt and 2 tablespoons of sugar. Taste and adjust the sweetness and saltiness as needed, adding incrementally.
Step 7
Ladle the finished sweet pumpkin porridge into serving bowls. Garnish with a sprinkle of finely chopped almonds. Your delicious, smooth, and nutritious sweet pumpkin porridge is ready to be enjoyed, especially while warm!
