Made with either steamed or roasted sweet potatoes, it’s simple enough for anyone to prepare and makes a satisfying breakfast or snack. The subtle richness of olive oil and the nutty crunch of almond topping elevate its delightful flavor.

Ingredients

  • 5 roasted sweet potatoes (approx. 300g)
  • 4 cups milk (800ml)
  • 1 tbsp olive oil
  • Pinch of salt
  • Pinch of black pepper
  • Chopped toasted almonds (for garnish, optional)

Cooking Instructions

First, prepare your sweet potatoes. You can use 5 pre-roasted sweet potatoes (about 300g), or steam fresh sweet potatoes until they are tender. Peeling them while they are still warm will make the process much easier.

Place the peeled sweet potatoes into a blender. Pour in 2 cups of the milk (approximately 400ml) out of the 4 cups you have prepared. You can adjust the amount of milk based on your preferred soup consistency.

Secure the lid on the blender and blend until the sweet potatoes are completely smooth, with no lumps remaining. The key to a silky smooth soup lies in how finely you puree the sweet potatoes.

Pour the smooth sweet potato and milk mixture into a saucepan. Be careful to pour it in smoothly to avoid splashing.

To rinse out any remaining sweet potato from the blender, pour about half of the remaining milk (approx. 200ml) into the blender, put the lid back on, and shake it. This ensures you get every last bit of sweet potato goodness out of the blender.

Pour the milk used for rinsing the blender into the saucepan. Now, add the remaining 2 cups of milk (approx. 400ml) to the saucepan. Use a spatula or whisk to combine the sweet potato mixture and milk thoroughly, ensuring a lump-free, creamy consistency. (Total milk used: 4 cups)

Place the saucepan over low heat. Stir continuously and gently to prevent the soup from sticking to the bottom. It’s important to stir patiently as the soup slowly heats up and begins to simmer.

Once the soup starts to simmer, add 1 tablespoon of olive oil to enhance the flavor, and stir well again. Continue to cook over low heat for another 2-3 minutes, ensuring the olive oil is evenly distributed throughout the soup. Adjust the consistency as needed.

Finally, season the soup. Add a pinch of salt and pepper, tasting and adjusting as you go. Ladle the finished soup into a serving bowl. For an extra touch of texture and nutty flavor, sprinkle some coarsely chopped toasted almonds on top (optional).
