Simple Pumpkin Porridge Recipe for Baby Food

Main Ingredients- 1 medium-sized kabocha squash
- 1 bowl of cooked rice (cold or warm)
- Water (for boiling squash)

Step 1
First, thoroughly wash the kabocha squash. Cut it in half and carefully scoop out the seeds and pulp using a spoon. Be sure to remove it all, especially if preparing for a baby.

Place the halved squash on a microwave-safe plate. Microwave for about 3 to 5 minutes. This step softens the skin, making it much easier to peel later on.

Once removed from the microwave, let the squash cool slightly. Then, use a peeler or a small knife to remove the skin. Cut the peeled squash into bite-sized pieces.

In a pot, add the prepared squash and 6 cups of water. Bring it to a boil. You can adjust the amount of water depending on the size and moisture content of your squash. Generally, about 1.5 times the volume of squash in water works well for the right consistency.

Once the squash is thoroughly cooked and tender, use an immersion blender or a regular blender to puree it until smooth. Aim for a completely smooth texture without any lumps.

Add 1 bowl of cooked rice to the smooth pumpkin puree. Stir well to break up any clumps of rice.

Reduce the heat to low and continue to cook, stirring frequently, to combine the rice and pumpkin puree. Be careful to prevent it from sticking to the bottom of the pot. Gentle simmering is key.

When the rice has broken down and the mixture has reached a porridge-like consistency, you can blend it again with the immersion blender. This will create an even smoother, silkier texture. It should blend beautifully without any lumps.

Finally, keep stirring over low heat until small bubbles start to pop on the surface. At this stage, you can add a pinch of salt or a little sugar to adjust the sweetness and seasoning to your preference. For baby food, omit the salt or use a very tiny amount.
