  • 2 large potatoes
  • 1 Tbsp raisins
  • 4 walnuts
  • Plenty of grapeseed oil

First, peel the two large potatoes. For one of the potatoes, you’ll be grating it. To prevent it from browning, fill a bowl with cold water and place the grater in it while you grate the potato.

Let the grated potato sit in the water for a moment. The potato solids will settle at the bottom, and a cloudy liquid will form on top. Carefully pour off the top liquid. Then, place the potato solids in a cheesecloth or fine-mesh sieve to squeeze out as much excess water as possible.

You want to end up with this milky white potato pulp, with most of the water removed. This step is key to achieving a chewy texture.

Peel the remaining potato and finely julienne it into thin matchsticks. After julienning, rinse the potato strips briefly under cold water in a sieve to remove excess starch, which will result in a cleaner flavor.

To remove any potential bitterness and enhance the nutty flavor, microwave the walnuts for about 1 minute, then finely chop them. Finely chop the raisins as well. Microwaving the walnuts beforehand adds a lovely depth of flavor.

In a large bowl, combine the grated potato pulp (water squeezed out), the julienned potato, the chopped walnuts, and the chopped raisins. Season with a pinch of salt and mix everything thoroughly until well combined.

Heat a generous amount of grapeseed oil in a skillet over medium heat. Drop spoonfuls of the potato mixture onto the hot oil, flattening them into small, round pancakes. Fry on both sides until golden brown and crispy. Cook thoroughly to ensure the inside is chewy and the outside is perfectly crisp.
