Main Ingredients- 1 zucchini (choose a medium to large, plump one)
- 2 scallions (optional, for color and fresh flavor)
Cooking Instructions
Step 1
First, wash the zucchini thoroughly and pat it dry. Slice it into pieces about 1 cm thick – avoid slicing them too thinly, as this helps maintain a good texture after cooking. Finely chop the scallions if using.

In a small bowl, combine the soy sauce, corn syrup (or honey), gochugaru, perilla oil, and minced garlic. Whisk everything together with a spoon until well combined to create a delicious glaze.

Heat a non-stick pan over medium heat and add a little cooking oil. Place the zucchini slices in the pan and sear them until golden brown on both sides. Be careful not to use high heat, as this can burn the outside before the inside is cooked. Cook until the zucchini turns slightly translucent and tender.

Once one side of the zucchini is nicely browned, use a brush to gently spread some of the prepared glaze onto that side. Flip the zucchini slices so the glazed side is down, and sear for another moment. Brushing and searing the glaze on both sides will make the pan-seared zucchini even more flavorful.
