Main Ingredients

  • 1-2 ripe tomatoes
  • 1-2 potatoes (medium-sized)
  • 1/2 medium onion
  • A little bit of green onion
  • 1 Korean chili pepper (adjust to taste)
  • 2+ cups rice water (water used to wash rice)

Cooking Instructions

First, prepare a delicious broth for the stew. Pour 2 cups of rice water into a pot, add a piece of kelp and dried pollock or anchovies. Simmer over medium heat for 10 minutes. Remove the kelp, but leave the dried pollock or anchovies in the pot to infuse the flavorful broth.

While the broth is simmering, wash the tomatoes, remove the stems, and cut them into large pieces. Add the chopped tomatoes to the broth and cook them together. As the tomatoes cook, their natural sweetness and umami will release into the soup.

Peel the potatoes and cut them into approximately 1.5cm cubes. (You can also add tofu, zucchini, or mushrooms for extra flavor, according to your preference.) Add the cubed potatoes to the pot and simmer over medium-low heat until the potatoes are thoroughly cooked and tender.

Once the potatoes are almost cooked, dissolve the doenjang and gochujang (if using) in a little cold water beforehand. This helps them mix smoothly into the stew without lumps. Add the dissolved paste mixture to the pot and stir well while it simmers.

Slice the onion and add a generous amount of minced garlic. Continue to simmer for a bit longer, allowing the onions to become translucent and the flavors to meld together.

Finally, add the red pepper flakes and the diagonally sliced Korean chili pepper. The chili pepper adds a spicy kick, so adjust the amount or omit it if you prefer less heat. Once all ingredients are well-cooked and the broth is deliciously infused, turn off the heat to complete your flavorful tomato doenjang jjigae.
