- 5 sticks of imitation crab meat (kani/surimi sticks, approx. 100g)

First, prepare the zucchini. Wash it thoroughly, then thinly julienne it into about 0.5 cm thick strips using a mandoline or a knife. Cutting them too thick can prolong cooking time and affect the texture.

Next, prepare the imitation crab sticks. Shred them finely by hand or chop them with a knife into pieces similar in size to the julienned zucchini. Avoid shredding them too finely, as this can reduce the pleasant chewiness.

In a large bowl, combine the julienned zucchini and the shredded crab sticks. Add 3 tablespoons of pancake mix (buchim garu). Gently mix with your hands until the dry mix evenly coats the ingredients.

Now, add 1 tablespoon of fish sauce for an extra layer of umami. If you don’t have fish sauce, soy sauce or Yeondu (a Korean soup soy sauce) can be used as alternatives. Mix again to ensure it’s well incorporated.
