  • 1 large can of Tuna
  • 1/2 stalk of Green Onion
  • 2 Cheongyang Peppers (Korean chili peppers)

In the pot you’ll be cooking the stew in, add the oil from the large can of tuna. This oil will add depth of flavor when stir-frying the kimchi.

Add the prepared kimchi to the pot. Use scissors or a spatula to cut the kimchi into bite-sized pieces (about 2-3cm) so it cooks evenly. Stir-frying the kimchi well will mellow its sourness and enhance its savory taste.

To soften the kimchi’s sourness and add a deeper flavor, add 1.5 to 2 tablespoons of vinegar. Adjust the amount based on how fermented your kimchi is.

Add 1 tablespoon of sugar for sweetness and 0.5 to 1 tablespoon of soy sauce for umami. Since you’ll be adjusting the saltiness with fish sauce later, it’s best to start with less soy sauce.

Add 2 tablespoons of gochugaru (Korean chili powder) for a hearty and spicy flavor. You can adjust this to your preference.

If you have kimchi juice, add it to the pot and stir-fry together. Kimchi juice adds a deep flavor to the stew. After adding all the seasoning ingredients, stir-fry the kimchi for about 3-5 minutes until it becomes tender and the seasonings are well incorporated. It’s important to stir-fry until the kimchi is softened and the flavors meld.

Pour 500ml of water (about 3 paper cups) into the stir-fried kimchi and add 1 tablespoon of fish sauce for extra umami. Bring to a rolling boil over high heat with the lid off. Once boiling, reduce the heat to medium and simmer for about 10 minutes until the kimchi is tender.

Once the kimchi is sufficiently cooked, add the entire can of tuna, including its oil. You can also add 1 tablespoon of minced garlic and a little more gochugaru if you like. Stir everything together and let it simmer for a short while longer.

Finally, add the chopped green onion and Cheongyang peppers, and simmer once more. Your delicious tuna kimchi stew is ready! Adding the Cheongyang peppers for extra spiciness makes it even more flavorful.
