  • 1/2 head of well-fermented kimchi
  • 1 can of tuna (including the oil)
  • 1-2 Tbsp sesame oil
  • 1/2 Tbsp sugar (adjust based on kimchi’s sourness)
  • 0.5-1 ladle of kimchi juice
  • 2/3 cup water (approx. 130ml)

First, cut the kimchi into bite-sized pieces, about 2-3 cm wide. Place the chopped kimchi into a pot or a Korean earthenware pot (ttukbaegi). Drizzle 1-2 tablespoons of sesame oil over the kimchi to add a nutty aroma.

Now, let’s stir-fry the kimchi. To balance the sourness of the kimchi and enhance its savory flavor, add sugar. If your kimchi is very sour, use about 2/3 Tbsp of sugar; if it’s less sour, use about 1/2 Tbsp. Stir-fry the kimchi over medium-low heat until it becomes slightly translucent.

Once the kimchi is softened and cooked, add about 0.5 to 1 ladle of kimchi juice. This juice will add depth and a rich flavor to the stew. You can adjust the amount based on the saltiness of your kimchi and your preferred taste.

Next, pour in 2/3 cup (approximately 130ml) of water. Turn the heat to high and bring the stew to a boil. The amount of water will determine the stew’s consistency, so feel free to add a little more water if you prefer a thinner broth.

When the stew is vigorously boiling, it’s time to add the tuna. Crucially, do not drain the oil from the tuna can; add the entire can, including the oil, as it contributes significantly to the flavor. After adding the tuna, gently stir it into the broth by spooning the hot liquid over it. Avoid vigorous stirring, as this can break up the tuna pieces.

The tuna itself acts as a natural flavor enhancer, so you don’t need to make a separate broth or add many other ingredients for a delicious result!
