Sweet and Spicy Tteokkochi Sauce

  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 6 Tbsp Honey (or Corn Syrup/Oligosaccharide)
  • 2 Tbsp Sugar
  • 2 Tbsp Minced Garlic
  • 10 Tbsp Water

First, let’s prepare the rice cakes. If you’re using tteokbokki rice cakes, gently soak them in cold water for about 5 minutes to prevent them from sticking together. If your rice cakes are hard, you can blanch them in boiling water for 1-2 minutes to soften them up before proceeding.

Now, let’s make that delicious sauce! In a small bowl, combine 1.5 Tbsp gochujang, 6 Tbsp honey (or corn syrup/oligosaccharide), 2 Tbsp sugar, 2 Tbsp minced garlic, and 10 Tbsp water. Whisk everything together until smooth and well combined, ensuring there are no lumps. You’ve now created the perfect sauce base!

It’s time to stir-fry the rice cakes with the sauce! Pour the prepared sauce into a heated frying pan over medium-low heat. Once the sauce begins to bubble, add the drained rice cakes. Gently stir with a spatula to ensure the sauce coats every piece of rice cake evenly. Continue to cook for another 2-3 minutes, stirring occasionally, until the sauce thickens and coats the rice cakes with a glossy sheen. Be careful not to let the sauce burn by keeping the heat too high.
