Tsuyu Bibim Sauce
  • 2 Tbsp soy sauce
  • 2 Tbsp store-bought tsuyu (noodle soup base)
  • 2 Tbsp sugar
  • 2 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare 1 pack of frozen udon noodles. You can cook them directly, but an extra step can improve the texture.

Now, let’s make the delicious Tsuyu Bibim sauce. In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp store-bought tsuyu, 2 Tbsp sugar, and 2 Tbsp toasted sesame seeds. Mix them well until evenly combined. (If you enjoy sesame oil, adding 2 Tbsp can also be delicious!)

Step 3

For this dish, well-fermented, slightly sour kimchi works better than fresh kimchi. Take a handful of the inner leaves of the kimchi and prepare it by removing any excess stem.

If you want to slightly reduce the spiciness of the kimchi, you can rinse it very briefly under cold water, then squeeze out the excess water and thinly julienne it. This will give you a spicy yet clean flavor.

The star of Tsubidon! Make a perfectly soft-boiled fried egg. Leaving the yolk slightly runny and mixing it with the udon noodles is incredibly delicious.

Step 6

Instead of boiling the frozen udon noodles directly in water, it’s helpful to first microwave them for about 2 minutes. This helps prevent the noodles from clumping and ensures they cook to a delightful springiness.

Step 7

After briefly microwaving the frozen udon noodles, place them in boiling water and cook for about 1 minute, just to warm them through. Avoid overcooking, as the noodles can become mushy; maintaining a chewy texture is key. Adjust the cooking time according to your preference.

Once cooked, drain the udon noodles thoroughly in a colander. It’s important to remove as much water as possible, as excess water can dilute the sauce and make the dish taste bland.

Add about 2 Tbsp of the prepared Tsuyu Bibim sauce to the drained udon noodles and mix well. You can adjust the amount of sauce according to your taste.
