We’re making a spicy and hearty cheonggukjang stew, simmered with rice water for an even richer and deeper flavor. This ‘one-step’ recipe, where all ingredients are added at once, ensures even beginner cooks can achieve a delicious result. It’s a true rice-thief of a dish, so be prepared for seconds!   • 200g Cheonggukjang (fermented soybean paste)
  • 500g Tofu
  • 1/3 Zucchini
  • 1/2 Onion
  • 3 Shiitake mushrooms
  • 1/2 pack Enoki mushrooms
  • 3 Potatoes
  • 1 Green onion

Cooking Instructions

In a pot, arrange the large-cubed tofu, sliced onion, diagonally cut green onion, thinly sliced zucchini, diced potatoes, shiitake mushrooms (sliced), and enoki mushrooms (separated). Add the minced garlic, soy-sauce pickled chili peppers, and chili-powder pickled chili peppers for extra flavor. Finally, add the cheonggukjang and the doenjang jjigae seasoning base to season the stew.

Pour in the prepared rice water and broth, ensuring the ingredients are submerged. Bring to a boil over high heat, then skim off any foam that rises to the surface. Reduce the heat to medium-low and simmer gently. This slow simmering process allows the savory flavor of the cheonggukjang to fully develop and create a rich broth. If you’re short on time, you can bring it to a boil over high heat, turn off the heat, and then reheat it over medium heat just before serving.
