This is the perfect dish when you don’t feel like spending much time in the kitchen on a weekend! It’s a one-bowl meal that’s satisfying even without soup or stew. The salty Spam, fluffy scrambled eggs, and creamy mayonnaise are incredibly addictive and will have you reaching for seconds. You can whip this up in just 10 minutes using Spam from your fridge. Main Ingredients

  • 1 can Spam (approx. 200g)
  • 1/2 onion (small)
  • 4 stalks green onions
  • 2.5 bowls warm cooked rice
  • 6 fresh eggs
  • 4 Tbsp cooking oil (2 Tbsp for stir-frying, 2 Tbsp for eggs)
  • Mayonnaise, to taste

Sweet & Savory Sauce

  • 1.5 Tbsp soy sauce
  • 3 Tbsp mirin (or cooking sake)
  • 1 Tbsp sesame oil
  • 0.5 Tbsp sugar (adjust to your sweetness preference)

Cooking Instructions

Step 1

First, let’s prepare the ingredients. Dice the Spam into roughly 1cm cubes. Finely chop the green onions. Thinly slice the onion. Having all your ingredients prepped makes cooking much smoother.

Crack the 6 eggs into a bowl. Remove the chalazae (the white stringy bits) and whisk them gently with a fork until smooth. You don’t need to add salt at this stage, as the Spam and rice will provide enough seasoning when mixed together.

Heat 2 Tbsp of cooking oil in a pan over medium heat. Add the sliced onions and stir-fry until they become translucent. Cooking the onions until they are sweet and tender is key to the flavor.

Once the onions are translucent, add the diced Spam to the pan and stir-fry together. Cook until the Spam is lightly browned and has rendered some of its fat, which adds to the flavor. Continue cooking until the Spam pieces are golden.

Now, let’s make the delicious sauce. In a small bowl, mix together 1.5 Tbsp soy sauce, 3 Tbsp mirin, 1 Tbsp sesame oil, and 0.5 Tbsp sugar. If you prefer a sweeter taste, feel free to add a little more sugar.

Pour the prepared sauce into the pan with the Spam and onions. Stir well to ensure the sauce coats all the ingredients evenly. Let it simmer over medium-low heat, stirring occasionally, until the sauce thickens slightly and clings to the ingredients. This process deepens the flavor considerably. Be careful not to let it burn.

Clean the pan or use a separate one. Add the remaining 2 Tbsp of cooking oil and pour in the whisked eggs. Use a spatula or chopsticks to scramble the eggs. It’s nice to leave the pieces a bit larger for a better texture, rather than breaking them down too finely.

Serve the warm rice in a bowl. Arrange the scrambled eggs around the edge of the bowl. Generously spoon the savory Spam and onion mixture into the center.
