Hello everyone! Today, we’re going to make a super simple and incredibly popular side dish: a chewy and sweet soy-glazed dried shredded squid stir-fry. It’s perfect as a snack for kids, a lunchbox addition, or a staple for those living alone!

The best part about this dish is that you don’t need to soak or rinse the dried shredded squid; you can start cooking right away. First, cut the dried shredded squid into bite-sized pieces, about 5-7 cm long, using scissors. This makes it easier to coat evenly with the sauce and to eat.

Place the cut dried shredded squid into a bowl. Gently untangle any clumps with your hands. Add 1 tablespoon of vegetable oil and gently mix it into the squid strands. This step helps prevent the squid from sticking together and ensures the sauce adheres better later.

In a separate small bowl, combine 1 teaspoon of soy sauce and 1 teaspoon of oligosaccharide (or corn syrup). Add a pinch of toasted sesame seeds and mix well to create the seasoning sauce. While you can use sugar instead of oligosaccharide, oligosaccharide adds a lovely sheen to the final dish.

Now it’s time to stir-fry. Heat a dry pan over low heat. Add the dried shredded squid that you’ve already coated with oil, and stir-fry for just 1-2 minutes over low heat until the squid strands slightly curl up and develop a chewy texture. This brief pre-frying enhances the texture. Transfer the pre-fried squid to a separate plate. Without wiping the pan, pour the prepared seasoning sauce into the same pan and bring it to a simmer over low heat. As soon as the sauce starts to bubble, turn off the heat immediately. Quickly add the pre-fried dried shredded squid back into the pan. Using the residual heat of the pan, stir-fry briskly to ensure the sauce coats the squid evenly. This method prevents the sauce from burning and creates a delicious stir-fry where the glaze clings perfectly to the squid.
